Roasted Lemon Pepper Pumpkin Seeds
Roasted pumpkin seeds are one of my favourite things about Halloween, besides scary movies, ghost walks, and amazing costumes. Being that it's only a few days before halloween it's about time I made some. Growing up we would roast them every year while pumpkin carving, what an easy tradition to start with my family.
Here is how I did it:
After the seeds are removed from the pumpkin, wash them in a colander and place in a pot of water. Bring the water and seeds to a boil and let simmer for 10 minutes. Once the seeds are done simmering, drain and pat dry with paper towels, preheat your oven for 350°F. After the pumpkin seeds are pretty much dry, place seeds on a baking pan with a teaspoon of oil, sprinkle on a tablespoon and a half of lemon pepper. Make sure the seeds are placed evenly on the baking sheet. Bake for 10 - 15 minutes until the seeds are golden brown, keep an eye on them in the oven since they can burn very easily. Remove and let cool, and you are done!
